First, please translate 'ubermensch.'
Second, please tell me why this is interesting

"overman" or more colloquially "superman"

Sorry, this video is a very interesting scene if you have watched the rest of the film. I couldn't find a more self enclosed clip. In this clip the young man who closes the trunk has murdered the man who is in the trunk. Jimmy Stewart is the man's old professor who taught him that there is a class of people for whom murder isn't wrong, the ubermensch. The young man is living out Nietzsche's worldview. It's the most interesting movie I've watched that occurs in one room.

What is the best Nietzche collection of books, for someone like me who wants to get a feel for him as well as compile some of his more brutally honest quotes?

I would recommend The Gay Science if you're only going to read one. Nietzsche is a quote machine. If you're going to read more than one, maybe Twilight of the Gods, Thus Spake Zarathustra, Human All to Human.

This is a classic,

"That lambs dislike great birds of prey does not seem strange, only it gives no ground for reproaching these birds of prey for bearing off little lambs. And if the lambs say among themselves: “these birds of prey are evil, and whoever is least like a bird of prey, but rather its opposite, a lamb—would he not be good?” There is no reason to find fault with this institution of an ideal, except perhaps that the birds of prey might view it a little ironically and say: “we don’t dislike them at all, these good little lambs; we even love them: nothing is more tasty than a tender lamb.” Nietzsche, On the Genealogy of Morals
